I will be honest, before I came to Lopez Island I had never heard of anyone proudly French roasting an Ethiopian coffee. It was sacrilege. The delicate fruity flavor of Ethiopian beans were lost on darker roasts, at least that’s what I was taught. After some experiments and experiences I learned that is not always true and we selected this bean specifically to expose the truth that a dark roast Ethiopian coffee can still retain its juicy fruity luster.
